Our award-winning traditional English-style Clothbound Cheddar aged a minimum of 16-18 months. This beautiful cheddar has a natural sweet and tangy sharpness with a savory, earthy finish that keeps giving long after you’ve taken your last bite.

This award-winning traditional Dutch-style gouda evokes flavors of salted caramel and butterscotch with a remarkably long-lasting umami finish. Aged a minimum of 18+ months.

Tomme d’Evanston
This fresh-tasting elegant alpine-style cheese is mild and nutty, with subtleties of fresh straw and a hint of mustard on the finish. This cheese is perfect for a cheese board, but is also a great melting cheese, similar to a gruyère cheese. Tomme is typically named for the place in which it is made, thus we’ve given a nod to the neighborhood where we’ve laid our roots with this cheese. Aged 6-12 months.

Quark
Fresh creamy farmer’s cheese made in the traditional Eastern-European style. This bright, tangy and versatile cheese pairs beautifully with fruit and honey for breakfast or dessert, can be incorporated into cheese sauces and pastas and also serves as the perfect ingredient for baking cheesecakes, blintzes or strudels. Quark also is a fabulous substitute for commercial cream cheese; use quark in your favorite fruit or vegetable dip or substitute it for cream cheese in your favorite party spread!
